Thank you Greg! I didn't notice the wasabi helping but I really love the stuff. I'll give it a try again and see what happens. Maybe I'll try a big spoonful. lol :-D

You said you did a quick cure on the chops. what exactly does a quick cure entail?

I make a mixture of 1 TBS Tenderquick and 1 teaspoon sugar per pound of meat, then sprinkle over the chops and let them cure in the fridge for 1 to 2 hours. Then rinse well and cook. The TQ adds salt so I skip that when seasoning.
The cure keeps the chops moist. It works well on chicken pieces too.

Looks great as usual..not to get off topic but where did you score that custom grate in your drum?

Militant, thanks! I love the grate. Brethren Matt from Meyer Metal Works made it. It's heavy duty and works nice!
I use it in my old UDS but have been using it in my BPS drum too...
