first I saute the onion and ham removed from pan, then par fried the shredded potato, then scramble the eggs. cool everything and combine in a zip lock bag and form a log into fridge to cool off before the weave is applied.

I'm not sure I'd smoke that tomorrow. I believe they suggest waiting for 2 full days, so that it's coming off the smoker right when I drive up to LA from SD on Monday...
