The only shorties I could find had been cut separate in the package...


Seasoned well and on the Weber...Indirect with pecan for some smoke...
Three hours at 250...


Meanwhile I cooked some bacon for the drippings...
Cooked down some shrooms, shallots, and celery...


A bottle of good pale ale...Simmer for a while...


Filled the pan with the ribs and put a lid on the pan...
Turned up the heat to around 350 to braise for an hour and a half...


Then back in the smoke for another half hour...


And ended up with a platter of "Heck Yes"!

Bet they didn't last long. I would go back to where bought them and see if they have full short ribs or plate ribs in the back. They may not get them cut up. I had to ask the right guy who finally said "oh you mean the packs before we cut them up". Now I can get them when I want.

Yeah that is a great idea...I think I'll give it a try...
 
BSR's are my favorite thing to smoke and there really isn't a close 2nd although I still like to mix it up, those look fantastic :hungry:
