That's steam. I had just pulled it out of the ice chest after resting for an hour. It was like 35 degrees out and the brisket was still very hot.
Welcome to the forum. How long did you smoke that brisket to get that fine smoke ring? It looks done to perfection!
Separated the point from the flat and smoked it for a little over 9 hours.
