Since I'm off today I thought today would be a good day to fire up ol' smoky and make a lil' something. Gotta 3lb chuckie with salt, pepper, and garlic rub, & a 5.5lb butt rubbed in a wasabi rub I got for Christmas from the wife. On a side note, I used my new digital thermometer to measure temp at grate level vs. what my drum thermometer reads. My drum thermometer is mounted 1/2" from bottom grate and extends halfway into the drum. My digital thermometer at grate level reads 225F while the drum thermometer reads 200F. I have checked both in boiling water and they are accurate within 1.5 degree. This prolly accounts for the food in the past that wouldn't pull as easy as it should. Thx Wyatt, the meat was really good, and the wasabi rub was awesome!!! here are the finished pics, the first is the chuckie, the 2nd is the butt.
