I always enjoy following along with the TD's but usually get busy and miss the deadline to enter.
And my cellphone photography skills suck.
Anyway, since I'd just made a bunch of sausage, I figured I'd submit some terrible pictures of my attempts.
One of the types I made in the last fest was LEM's Cajun to which I added some of their Hot Cheese stuffed in natural casing. I think I got about 9 lbs of cased sausages from this batch.

I started them indirect with KBB and Pecan wood.

They're starting to sing a little.

Time to get the onions and peppers to the party.

And put some crisp on the casings.

Smelling pretty darn good. Let's plate 'em up.

Great flavor, juicy, nice bit of mild smoke from the Pecan. The Hot cheese adds a bit of heat without being overbearing.
I'm satisfied with the results.
