PrincessofQ and I started with boneless skinless chicken breast, seasoned, and cooked it over mesquite.



Heated the oil and fried the shells



Added the toppings. Beans, cheese, chicken, and grilled jalapeños.




Then back to the grill!



And the finished product!



Easy and AWESOME! :thumb:

It looks fabulous! Very fresh -
EXCEPT - I don't like frying things -
couldn't you just heat the tortilla in
the microwave or over the gas stove? or the grill?
Any difference?

The purpose of frying is to make the shell "crunchy" and add texture to the bite. I haven't tried it, but I'm pretty sure that cant be achieved in the microwave with good results. From time to time I will grill flower tortillas to brown them to a crunch, but I still have not tried that for this recipe.
