Grabbed a few things from Trader Joe including some pizza dough :biggrin1: and headed to the cabin. I did pizza Friday night and had an extra pizza dough left. Had a whole chicken and hanger steak in the freezer so got to work.

Deboned, seasoned and put the chicken in the PBJ

In the meantime I made a Mediterranean "pico" and some tzatziki sauce

Next I left the pizza dough sit out a bit and quartered it

Rolled each quarter out with a rolling pin

Delicious Saturday night! Hope everyone is enjoying their weekend. Thanks for looking!

Very nice. It’s refreshing to do a twist on a classic.

Superb, Sako! One can do all sorts of things with TJ's pizza dough!

Next time you make the Mediterranean wraps, slather some of TJ's Zhoug sauce and garlic spread on your flatbread. That, plus that nice pico you made, and some pulled PB chicken and you'll be in heaven.

Hell, Yes, Sako!

You sure do eat well when headed up to that cabin of yours... not exactly "roughing it."

Hope you've had a relaxing adventure this weekend.

Both look excellent Sako, I need to find out where yer cabin is!

This dough is so versatile Richard. One of the pitas went over and it turned into the best pita chips ever. :hungry: Saw the zhoug sauce but bypassed it. Will pick it up next time for sure. We have almost if not identical flavor profile preferences.:becky:

Thanks Marc!

That's when I get creative with whatever is on hand and some of the best meals I've done have been up there. Kid you not when I was doing this I was thinking "I bet Marc will enjoy this thread" considering you're style of cooking and utilizing international flavors and ingredients. :thumb:

Damn :hungry: I'd kill a bunch of those! amazing how the mountain air increases the appetite.
