it's been a while since i've done a meatloaf. every time i used to do them i would use a recipe out of a book, but this time i used my mom's recipe and i think i'm going to stick with this one from now on. nothing new with the wings, but for the ribs today i decided to do a hot sauce slather. i used a mango habanero hot sauce that i got from target
meatloaf with a slice to show off the smoke ring. the ring is really small, but it only took 2 hours to cook so it didn't pick up much smoke. it still tasted fine though. i only had one slice with dinner tonight and i'm saving the rest for meals throughout the week
wings 2 hours into the smoke on the bottom rack
wings after i grilled some sauce into them. the sauce on the left is a BBQ sauce that i came up with to mimic Theo's BBQ, an old southern comfort food restaurant that had great sauces, but they closed down a few years back. the wings on the right are with my new mustard sauce recipe.
the bend test!
it's really light in color, but the smoke ring is there
the final plate. grilled garlic bread, grilled meatloaf, grilled corn, and i grilled the sauce into the ribs.
i used apple and pecan wood. once this bag of pecan is gone i'm goin back to hickory. the wings were great, the meatloaf was pretty good, and the garlic bread and corn were also pretty good. as for the ribs, i might try the hot sauce slather again, but i would go with a cayenne sauce instead of mango habanero. after my last smoke was a let down, i'm glad i accomplished a pretty good one this time, i thought the texture on everything was pretty good. it's probably going to be 3 to 4 weeks before i get to do another cook, i may do an oktoberfest themed smoke next time
