1kg (2 lb) of good minced beef or minced lamb
1 heaped tablespoon of salt
1 large chopped onion
fresh ground black pepper (loads)
1/2 teaspoon of ground cumin
large bunch of fresh curly parsley finely chopped
3-4 cloves of garlic crushed
1 egg
1/4 loaf of white bread (crusts removed)

add the bread to a bowl, cover in fresh milk, then squeeze out the milk, then add the bread to all the other ingredients and mash with your hands till well mixed

form into a meatloaf and cook on the BBQ

this also makes excellent hamburgers,

and if you form small balls, roll in flour and deep fry in hot sunflower oil (greek frikkadels)
