kinda like buckboard bacon

comes out pretty good, kinda like a cross between regular and Canadian bacon

Buckboard bacon is amazing. I usually cure whole butts for 7-8 days so you should be good with 10.

I've never heard about backboard bacon.. and this whole time I thought I was doing some new idea. Oh well, I guess I've got some backboard to look forward to!

You can find a tutorial of sorts by searching "buckboard bacon" I think Cowgirl was the first to post it. Others have followed and been very happy with the results.

I did a pork loin ham a few weeks ago, I might try bacon-ing one next time!
