If you haven't done a roasted potato salad then go make one right now. Use the same sauce but just cube and season and roast the potatoes. I actually roast mine with coarsely chopped onions too. It's a whole new potato salad world. I can remember the last time I boiled. The texture is awesome.

Smokejumper uses red potatoes that we smoke-roast on the BGE, then we use something like a mustard vinaigrette and bacon to complete his potato salad. It is somewhat like German Potato Salad. And very good, although, at that point, some potatoes are lost to testing usually.

I prefer to steam the potatoes, I use red or Yukon Golds, either way, steamed in skins, then rubbed clean. The steaming introduces less water and seems to cook more evenly.

interesting steaming vs. boiling. when you say "rubbed clean" can you elaborate? you do them whole?
