Gary, in all honesty, that's probably the best and most "to the point" piece of advice I'd read in all the years I've been here!
13th in the Invitational and that's the best I've done in awhile with Pork. I'm slowly learning to not overcook pork. Now what I sliced was the piece by the bone and it worked pretty good although no real bark.
 
I was cooking off four butts today and i tested meat form the money area and gosh dern it - that is good stuff.
I could really tell teh difference.
