I have an online "friend" who owns a catering business in Winnepeg, Canada. He has reached out to me in the hopes of learning about "REAL" BBQ to add to his business.

He has a sincere desire to learn to do it right. He will be in Louisville, KY at a conference with the evenings of July 23rd and 24th open. If you are a caterer/chef/restaurant owner in that area and would be interested in giving him a little "piece of your mind" about real BBQ let me know and I'll send you his contact information.

One of the best things about BBQ is the willingness to share and here is a person who wants to learn. And making contacts with others who share our interests is always a good thing.
