I have noticed a huge variations in the size of lump - from coin sized to the size of my open hand. This would explain un-even burning and temp swings. I always use the minion method to start - I will make sure to pack the coals from now on.
Still not in love with lump but will continue to use it - I like the idea of taking notes from each use.
I've had my Drum for about 3 years and have used the crap out of it! Such a simple, redneck design. It has made (with a little help) some of THE best food I've ever eaten - I love the thing!!
