Hello from South Texas!
So title isn't 100% accurate...I stumbled on this haven for all things smoky after having googled 'vertical off-set smoker' so I could strike out on my own to build one and stumbled across a post by a gentleman smoker here that goes by the handle of "peeps." His post from a couple years back where he shared his quest to to build "EARL" was the MUST READ THRILLER OF THE YEAR!
He's living the dream...now I am on the same quest!
Did my undergrad work in BBQ Arts on charcoal grills, got my masters on a OK Joe off-set horizontal my wife gave me about 10 years ago, have been working on a PhD with a buddy's trailer-mount horizontal off-set (I know, I know...cooking on another man's smoker...what can I say) and now it's time for my own custom rig (the smoker is dead; LONG LIVE THE SMOKER!) Looking around San Antonio there's a shortage of custom verticals so I either road trip to east Texas (LSG in Willis) or gone my own way. I got the tools, a little talent (and plenty of welder friends) so it's SMOKER TIME!
I'm excited to see some of the tips, tricks and articles from some of the folks here! If it's all the same, I'm gonna keep my mouth shut and listen for a little while...how else can I find that one nugget of smokey goodness some wise BBQ professor around here may be throwing down for us true BBQ believers to snack on?
