Well I was finally able to get a decent day to smoke on the Shirley and boy was it nice. This was the first time since Easter and I sure missed it. I smkoed baby backs, baked potatoes, my own Smokey beans, and some sausage for breakfast this week.

The ribs were rubbed with Dominator sweet rib rub and spritzed with apple juice, apple cider vinegar and beer and they were not wrapped. These are the best ribs I have done in a while even though I fought with the temps a little. I didn’t start out with a large enough coal bed but eventually everything stabilized.

It sure was nice to get her rolling smoke again. The fire was hot, the beers were ice cold and the pool water was cool. It was a great day to spend with the family!
