Butterflied a boneless lamb leg. Tried to get it all the same thickness in order to cook evenly.

Basted with a lemon / Oregano mix using a brush made out of Oregano, Thyme and Mint.

Cut up the tip of the herb brush, mixed it with some reserved baste. Adam Perry Lang style. :wink:

Sliced the lamb and coated it in the board dressing.

Served it on a pita topped with tomato, red onion and tazitki sauce. On the side, a tomato cucumber salad.
