Used the leg quarters from a smoked turkey I cooked the other day along with some andouille sausage to make a turkey and sausage gumbo.

Turkey gumbo is a thing now. Two posts on this forum makes it an official thing. :grin:

Bet you see it at the Cajun restaurants shortly after Thanksgiving.

Solid work- very tasty looking.

The family prefers the turkey breast - I give the people what they want. I butcher out and save the thighs, legs and wings for a fine gumbo later. Might be just now an "official thing" because of post count- but it's been a thing at my house for years.
