I was on-call this holiday weekend and needed to stay close to home. Perfect excuse to babysit the drum!
The short story is that I visited Texas last month and had the best meal of my life. I had to come home and try beef ribs on my drum.

Here's the short version (if you can believe it).
Here's what I started with:
Two "plates" of ribs, all trimmed up and rubbed with my homemade Lonesome Dove rub (recipe in the blog post):
Loaded on the drum with some potatoes and onions:
After 3.5 hrs on the drum naked, I pulled them to wrap in foil, and sent them back to the drum for another 2 hrs.
Potatoes stuffed with sour cream and fresh basil, topped with cheddar cheese.
Finishing up. Almost there. Looking for that internal temp of about 203 degrees F.
After about 7.5 hrs total time I brought everything in
The drum was running exceptionally well and a steady 220 degrees or so.
The outside of the ribs were nice and dark and crunchy. The inside tender and juicy.
I was happy with the end result.
