Cooked this up for the throwdown.....I love kofta kebabs.
This is how is went. Spice mix: garlic, salt, ground coriander, ground cinnamon, grated onion, chopped fresh parsley, ground cumin, cayenne, ground allspice, ground black pepper, ground ginger.
I mixed that up with 3/4 of a pound of ground lamb and 1/4 pound of 80/20 ground beef. The lamb was pretty lean and needed a bit more fat. I portioned these and rolled into meat balls to rest in the fridge for a few hours.
I had to shovel the back to get to the performer.
Then I formed the Kofta around soaked bamboo skewers.
Snow was coming down pretty hard. The grill was clean not 10 minutes before.
Served on Pita over lettuce, tomato and tzatziki and a side of couscous.
They were a hit!
