I was planning on doing a pizza on my kettle today (quick easy pizza dough recipes), but ended up playing ball with the boys for too long and didn't have time to get to the store for pizza supplies. So we raided the kitchen to see what we had to cook and decided on doing some quick quick tacos on the kettle...
Getting some coals ready...
Coals all set to cook...
Not pictured are a few hickory chips I threw on that we're left at the bottom of the bag of chunks I recently finished off.
Burger, onions, salt, and course pepper in the cast iron getting started...
Getting closer...
Meat is browned up and onions are translucent, on to next step...
Some Old El Paso taco seasoning (no substitutes acceptable) and some Pace mild salsa. Normally, we use the Pace Picante (which is way better than the salsa), but we were out today...
Salsa and seasoning in the pool and pan indirect now... (Sorry for the smudge on the phone camera lense :mmph
Meat simmering and getting tasty and warming up the tortillas. I love a little char on them... (Go Reds!)
Plate shots...
Quick and easy with the materials on hand. I'd do a bit different if I had a chance to run to the store, but still quite yummy. The meat definitely picked up a hint of the hickory flavor from the hickory chips. If I do it again, I won't be adding any smoking wood to it.
Thanks for looking.
