Last weekend I planned ahead a bit. I grilled all the veggies on the Performer the evening before. It's been a real ling time since I posted a full cook here that I forgot to take pics until the next say when I was prepping the lamb :crazy:
Anyway... the 3 main ingredients of the veggie salad below:
Grilled Cauliflower, Grilled Sweet Potato and Grilled Fennel. Also unpictured was 4 heads of confit Garlic. The cauli and the sweet potato was seasoned and oiled with a selection of different spices and EVOO. Things like tumeric, cumin and paprika come to mind. Yeah, I just chucked it all in and it was great! :loco:
Here's the Lamb below in a coating of Montreal Steak Seasoning and EVOO:
Yeah, I've never used Montreal Steak Seasoning on Lamb before, but it works extremely well, as you will see later.
Anyway, as I was lighting the Chimbley, I thought I'd just show a pic of this big lump of charcoal.
That there is Mallee Root charcoal. It's like steel and about as heavy. Burns forever and I wont use anything else.
When the Lamb went on, I threw together the indredients for the veggie salad.
Smashed in some smoked confit Garlic.:icon_smile_tongue:
Deep fried some cashews for some crunch.
Took off the lamb and wrapped it to rest for about an hour. Looks good huh?:biggrin1:
Grilled some Haloumi while the lamb was resting too!
And added the secret sauce! Fellas, this stuff is very keto friendly and tastes great. I could make my own dressing but this is easy and awesome.... And American!

After resting, it was very much how I like it!
And a few plated shots... different plates.
Anyway, it was very filling, and really good as a keto style dinner. That Montreal Streak Seasoning really does compliment Lamb very well too.
All in all it was a really good dinner.
