No, but seriously, my name is Mike, I am in the Cincinnati area and while I have been a great lover of bbq for decades, I only last year got a grill that smokes as I like. My Favorite Redhead and The Princess got me a PK that I have had my eye on for a couple years and I could not be happier. I remember the aluminum grill my best buddy from Texas had that made the best stuff.
I also have a Broil Mate gasser but I use it primarily for quickie meals.
For steaks I usually do cast iron pan searing then pan in the oven. Soon I'll be using the LNS method for thick rib eyes, trying to approximate a smoked slow roasted prime rib.
I had a Brinkman upright charcoal smoker in the past, never had much luck with it. But my new grill is the best. Every single thing I have smoked on it for a year has been very, very good. It did a perfect full brisket in about 7 hours with a respectable smoke ring and all.
Anyway, I really respect the fact that you are an established forum and understand what that is. I've been a member of an online group since the time this started and understand that we know each other better than a lot of folks in real life (My Favorite Redhead calls them my Imaginary Friends). A lot of us have in fact met in real life.
So, I hope thorough hanging out here to become a better pit master, eat better and make some new friends.
