Jerk chicken w/ fire roasted eggplant salad (PRON)

With all the talk recently about eggplants I decided to do something I haven't done in a while, eggplant salad. It's my absolute favorite thing to make with eggplants and everyone that tried it goes nuts for it. I just got a cyberq wifi to run with my Kamado and my Perfomer and didn't get a chance to test it on the Weber until today.:razz: As far as protein I decided on jerk chicken.

Here it goes:

Cleaned and halved the chicken

I rarely buy marinades from a store but this is one of the best store bought marinades or seasonings IMO

Seasoned it and let it sit for a few hours. The longer the better though.

Time to put everything on the grill

I roasted everything but the tomatoes because tomatoes get runny

And the finished product

My cyberq wifi and Weber collaborated very well. :becky:

Time to call it a night and gear up for Monday
