Had this on the brain for a bit.....
I start out dirty rice with a fatty.
Here is it off the Weber....cooked with a chuck of cherry.
I cook some chicken liver in a little olive oil...
In goes the onion, bell pepper and celery.
Then the fatty that's been grated over a box grater.
Add in 4 cups of cooked white rice and some Tony Chachere's Creole Seasoning and you're good.
I grilled up some chicken thighs that had Walkerswood Jerk marinade on them. This was an early grill shot before they had much color.
Here it is plated with some asparagus. Sure was tasty.
