Never too early for brisket...great way to wake up at the butt crack of before dawn and cook some bbq...

For low and slow cooks, I have been picking 18lb briskets so I can start them in the evening, start the smoker and get a full nights sleep :)
 
This was at the 3 hour mark. Brisket was around 130 internal. It is about 5 hours in now and internal is 150. Smoker temp is staying around 225. Started spraying it with some balsamic and worcestershire sauce.

Looking good,forget the coffee that stuff is for the kids,drink one of these.
