Hello, all. It looks like my first post, but I've been here before, just couldn't seem to reset my password.
Long story short, my family's lake house has a outdoor brick 'fireplace' for lack of a better term, that I think would be great for a small smoker. It's on the back patio and was originally open on both sides, but at some point, my grandfather had the back bricked up. It's fire brick on the sides, red brick on the back, and is attached to a two story tall brick chimney.
The dimensions are roughly 20 inches wide, 25 inches tall and 24 inches deep.
My initial thought is, steel door with thermometer and damper of some sort, and use the pegs that are already in there for coal basket->diffuser->grill rack.
My concerns are:
It's a little small, but I think it'd be large enough for a couple of butts or a few racks of ribs.
Is the long chimney going to cause too much of a draft?
Anybody with thoughts, ideas or inputs?
