I keep 3 Ribeye Sub-Primals in a fridge ,dry aging,I have them staggered,when I remove one,I replace it with a fresh one.It is an ordinary refridgerator.I simply remove them from the cryovac,rinse,pat down with paper towels.I place them in a rack over a drip pan and forget about them for AT LEAST 35 days MINIMUM.I have gone as much as 60 days.I think the Sweet Spot is 40-45 days.Sometimes I trim them,sometimes I don't.NEVER had an issue.My latest endeavour is to wet age in the cryovac for 60 days than remove and dry age fror 40 more,making a 100 day total.Good luck.If you ever do one,you will never go back.I'm sure a lotta folks will disagree but I don't give a FLIP cause I've done it and it works for me.I ONLY age WHOLE RIBEYE Sub-PRIMALS.NEVER just individual steaks.They ain't worth the trouble TO ME.I think leaving individual steaks to wet age a week or 2 may help but not dry age.
