Nice! Love brisket burgers!I'm grinding up a brisket and some bacon for brisket burgers on Texas toast.
I was asked to bring burnt ends. Picked up 2 briskets and a pork belly today.
I'll smoke the brisket on Saturday, rest it, and then separate the point from the flat, and then fridge em. Sunday I'll cube the point, add more rub, and smoke again.
The pork belly will be cubed on Saturday and then smoked/braised/smoked on Sunday.
I haven't made ham in a while. But I used to always make Alton Brown's city ham recipe, everyone always loved it. I'd smoke it for the first part of the cook.Why not do both
I am thinking about a bone in ham Just have to find a recipe that I like
