I'm new to this forum, I've been BBQ'ing in an ECB for 11 years, it is about to be retired. I've done ribs, chicken, shoulders and butts. Sometimes I throw a bread pan with a block or two of cheddar cheese in while I'm making Q. The cheese always melts but who cares? It solidifies again.
