• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Help With BBQ Sauce in the UK

Hi all, I'm looking for some help here. Unlike you guys in the States we're not spoiled for choice with BBQ sauces in Britain.

One thing I learned from competing last year is that it's a safer bet to use a commercial sauce (or modify one) for meat in competition because at least they're tried and tested where as sometimes you miss the mark with homemade sauces and thus risk your entries in the main categories.

While I was over in the Kansas City this year I tasted some really good sauces, Blues Hog was probably my favorite but unfortunately I can't get this in the UK.

So I've been scouring the web sites of specialist American food importers and I've come up with a list of what I can get over here. If you guys could comment on what some of these sauces are like it would help me out a lot.

So here's what I can get, some of them are easy to get hold of some are a bit hit and miss. I hope there'll be at least one decent one...

I agree out of that list, Sweet Baby Rays is a good choice.

I also would like to say that our large variety of BBQ sauces is one more reason the USA is the greatest country in the world!:-P

I have tried the ones in red and am a big fan of Sweet Baby Ray's. Also Cattlemen's is great as a base sauce to add to. Stubbs has some good marinades for pork...good luck! :-P

I'd have to go with JD's picks, also. Cattlemen's is probably the best 'original style' sauce on that list, IMO, and Ray's is the best. YMMV! :)

But when you add in the fact we have even more varieties of mustard hogging up shelf and yard space, it pulls the country back as a whole, no?

Sweet Baby Rays is local to Chicago, available nationwide here. We have about 10 varieties readily available here in Chicagoland (including 4 or 5 SBR Marinades).

On more than one occasion, I've doctored up this stuff into a nice rib sauce and (I'm pretty sure it's readily available in the UK).

I worked in an Irish pub here in NJ and we served it alongside the other condiments.

Let me check and see if my store carries Vidalia. I'm not an onion fan per se, so if they do, I would probably overlook.

I can box up some with the Chipotle and send to you.

I've had some of the Pappys line. Their Moonshine has good flavour and packs a fair wallop, about as much as I can enjoy. Haven't had the White Lightning but it's rated about the same heat so I'd treat it with respect. Others in their line that I really like are Not made in China, almost no heat but great BBQ flavours, and Chicks Dig Me, which is a firm favourite in our house. With a little luck, if you can get part of that line you can get the rest.
 
Just my opinion... I can't see BBQing meat for hours and hours, using good hardwoods, and then putting a store bought sauce with liquid smoke in it, on my finished product. Find a recipe and make your own. Leave the commercial BBQ sauces (with the liquid smoke in it) for the gas grillers who need to add some smokey flavor to their "BBQ". I'm just sayin'!
 
I have used the ones that JD called out, Bone Suckin' Sauce and Sweet Baby Ray's are good readily available sauces. Cattleman's is probably the best of the large format sauces I have tried, although it has been a long time since I used it straight.
 
I already have a ticket booked for Manchester in June. Let me know, and I might be able to ship some stuff over before I go. Also, it might be fun to work on making your own. And for beer, I would be willing to help.
 
I've only had SBR's. And, it's pretty good ...

You might consider doctoring up some HP Sauce. A little sweetness and that'd make something fine on beef.

However, I'm with the gentleman who said to make up your own. You'll be far happier in the long run.
