My best results, which leads to extended family members coming back for more ribs (and we like it a lot too) was simple:

Rub 30 minutes before. Smoke @ 225° for 3 hours. Lay out foil for wrapping, and sprinkle some brown sugar on it. Lay the ribs meat side down and Sprinkle more brown sugar on it. Splash on a little vinegar, and close and cook an hour or two. Unwrap and cook for another hour. When you pick them up in the middle with tongs and they bend a lot and feel like they might break. They are done.

I also like jerk marnaded ribs really well too. You can do them as a rack, or cut up raw individually and marinade. My favorite Q is pulled pork so I get were ribs are not your favorite.
