After years of tinkering with burgers and sausages on a simple BBQ, I've finally taken up the craft. We recently "adopted" a rare breed pig, which has just been slaughtered, so we have a freezer full of pork that it would be criminal not to turn into delicious BBQ.
I don't have anything like a high end setup, just a good solid barrel smoker, a Weber 22.5" kettle, and a little Cobb portable.
Traditionally, BBQ hasn't been a big thing here in England, probably because of the uncertain weather, but it's suddenly become much more popular, and we're beginning to see BBQ restaurants in London (mostly rather poor quality).
So my ambition is to stay a little ahead of the local game, and at least produce acceptable results for family and friends!
