Yesterday, I smoked a package of boneless beef ribs, which I picked up at Costco. Pulled them off the WSM at an internal temp of 205, which took about 3 hours at 275. Decided to pull the meat and and used for tacos, with peppers and onions, mushrooms and flour tortillas. It was pretty good. Tasted very much like smoked chuck roast, but cooked much quicker due to the smaller size.
 
I am gonna cut a boston butt in half.Smoke the bone in end for pulled pork and slice the boneless end for pork steaks.I think I may smoke a pot roast too.That is for Sunday.I am gonna cook a batch of Chili Saturday night,WITH BEANS,LOTS OF BEANS! :bow:

I think like that about chili, often. Good call
