When do you start thawing a brisket for comp. it still needs to be trimmed normally I get my Briskets week of the comp
But this one has been in the freezer for a little bit.
 
When I'm cooking every week, I try to always have two thawed and one started. I don't want unseen surprises to be a problem.

It takes two weeks for one to thaw when I put it in the very bottom of the frig(34*).
 
Pull it out of the freezer on Monday to trim it on Friday. You could start earlier if it is in the unbroken cryovac and it hasn't been aged already before you froze it.
 
How long would a frozen prime brisket be good for?

No concrete answer, it depends on how it's been preserved. Do you keep it in a freezer that never gets open,stable, and at -20*, could be good for 2yrs.

If you keep it in a defrost freezer that you keep adding stuff too, prolly4-6 months before it starts degrading at a small level.
 
I usually try for the weekend before and place it in the bottom of the fridge. In a pinch and if the cyro packaging is still in tact you can soak the brisket in a cooler full of water over night.
