My herbs this year did really well, but we've started getting freezing nights. Time to harvest. This year I thought I'd try vac sealing and freezing. Any tips?
I'd probably try dehydrating them as a preservation method. I recall kcmike/Oakridge BBQ saying that freezing seasonings was one of the worst things you could do to them. Might apply to herbs too.
I have vacuum sealed and frozen fresh thyme and rosemary. Seemed OK to me, but I'm no expert. I would not use it as part of garnish, but would cook with it without hesitation.
