I got into smoking a few years ago when my father in law gave me a Smokey Mountain propane smoker. I learned quite a bit messing around with it but recently decided to move up into something a little more serious.

I made the decision to go with a large Big Green Egg and today was the first cook.

It was a little bit of a learning curve using lump charcoal and wood chunks and getting it dialed in to the correct temperature but it was fun!

Right after I got it going. I waited until I was getting a nice blue smoke before throwing on the brisket.

Finished product. Just a little 6 lbs brisket but it came out really good. A lot better smoke flavor than the old gasser. :biggrin1:
 
Good lookin' brisket right there!

*sniff* i remember when my Egg was all shiny and new like that one . . .
