Well after almost a year of putting off the UDS project, I finally got it done last week. Seasoned it last weekend and today completed my first smoke!

My family raises beef cows and the freezer had a couple short ribs and plenty of chuck roasts so I decided to give one of each a try today

The ribs I just did simple salt, pepper, and garlic
The chuck roast I slathered with mustard, and put an experimental homemade rub.

On to the UDS sitting right at ~250degress

At about 3 hours the roast was at 150 degrees. I wrapped in foil and beef stock and put it back on for another hour. The ribs were actually about done at 3 hours. I tried my hardest to keep the temp at 250 but it was windy and snowy today!

Anyways.. Another hour in the smoker and an hour resting here are the results.

Pulled the chuck and made sandwiches with it. Loved the smoke ring Suuuuuuper good.

The ribs were just alright. Reallllly fatty but had good bark.

As far as the wind, any intake that allows the wind to blow straight in will spike your temps. One of my reasons for going to 1 1/2" 90 deg elbows. Even 30+ MPH winds do not affect the temps.
