I'm cooking for the first time on a UDS tomorrow. Got a tri-tip - also cooking some ABT's and some sausages (insurance in case of problems). I plan to put a rub on the tri-tip tonight.

I thought I would start the tri-tip first and then add the ABT's and sausages later. Or is it better to start them all at the same time and pull the sausages and ABT's when they are done?

1) Approximate time to smoke a 2.5 lb. chunk of tri-tip at 225-250?

2) Any need to turn the tri-tip partway through the cook?

3) Approximate time to cook the ABT's? the sausages?

Thanks for any advice you can offer.

I do tri-tip at high heat on my UDS. 325-350. I take them up to 130* internal for medium rare. Usually takes 45min to an hour.
