So, time to give the throwdowns a shot. I offer my Luau Spatchcock Chicken. I love Pulehu but don't have coals to cook over, so I call it Luau.
First, have to assemble the band:
Now to make the marinade, split the bird and let her rest in the fridge for 4-6 hours:
Time to tell Polly (Polly Pellet, of course) that it's go time, set chicken and start the smoke process:
While things cook, time to BOIL AND SIMMER the marinade for future flavoring (boil it or toss it!!!!)
