First attempt: Grilled Chicken Throwdown

So, time to give the throwdowns a shot. I offer my Luau Spatchcock Chicken. I love Pulehu but don't have coals to cook over, so I call it Luau.
First, have to assemble the band:

Now to make the marinade, split the bird and let her rest in the fridge for 4-6 hours:Marinated.jpg
Time to tell Polly (Polly Pellet, of course) that it's go time, set chicken and start the smoke process:

While things cook, time to BOIL AND SIMMER the marinade for future flavoring (boil it or toss it!!!!)

Great to see another first timer throwdown entry! I'm sure they'll let you change the photo. It's all in good fun anyhow.

Thank you! Like I said, I'll take my lumps if needed on this one. It was fun, and I have plans for the other throwdowns going on now. I cook like this all the time, so why not share the fun and food with others?! Cheers to all, and happy cooking!!
