Opened the box, no nuts and bolts, called Weber, got it in a few days, found out the WSM is a 2010 model!
Soon after, I got the Black Screen of Death, computer no worky! In fact still no worky! I'm at work doing this! Shhhhh... don't tell!
My take on the WSM??? EASY PEASY!!! I thought my UDS was easy, this practically ran itself! Honest! Only problem I had was it stayed at about 250* almost all day, couldn't get it lower...Did 2 Pork butts in about 12 hrs, did 2 Tri Tip Roasts in less than 2 hours... It was the best Pork Butt I ever did,(might have something to do with me injecting also) I made a batch of Southern Succor for the pork butts.
But the Tri Tip stole the show, it was amazing! I absolutely nailed it!, IMHO.
I used BIGBROTHERSMOKE, seasoning, let me tell you guys, THIS STUFF ROCKS!! Amazing taste. (Steph, does that plug qualify me for more freebies?) Really Good stuff! Do yourself a favor get some! This rub will go with all meats!
I reversed seared the Tritip, mmmmmmm...
A special MAHALO to Phil, our great leader!
and to JDmcgee, he helped me put the smoker together,(I'm mechanically disabled) and told me how to do the Tri tip...
