Question - is there supposed to be a disk that slides on the inside of the larger tube, that is on the tip of the smaller?

Smokey-T, the original piston I made and posted on this site this summer had a disk as you described, but after tinkering and testing we discovered that the 3/4 inch dome cap works really well.
At first there seems to be too big of a gap, but this actually helps when packing the piston. The old tight fitting disk design doesn’t let air past easily when you are packing down melted cheese.
Once the filling is cold and has solidified, the smaller diameter dome cap piston pushes the log out just fine.
