I was using discard, so yeast was included in the dough.

I'm also using the Chef John tip of proofing the dough in a warm oven by turning on the oven light which gets the temp to about 85F. I did the same with the dough made with the ripe starter, turning out some great pretzels that night. I'm back on the sourdough kick.
 
All beef, store bought seasoning kit, collagen non-edible casings you remove after smoking, about a 4 hour ramped up smoke. They are skinless but do have a snap to them.
Was very happy with the first go around, however since I know what's going in them, I might put 25% pork next time for a little more moisture.
This Charcutiery deal keeps getting under your skin, about like buying cookers around this joint does. So far, brats, kolbasa, polish sausage, breakfast links, hot dogs, capicola.
