Nitrates and hemoglobin are necessary for a smoke ring.
Neither of them are in the breads.

Looks delicious, tho... good job!
 
Love it! I've almost overdosed on zucchini bread this summer. We've put up many bags of shredded zucchini for bread this winter.

That gasket looks new.
 
Do you cover it? I would imagine it would pick up some smokeyness from the lump to? Is it better than from the oven??

I didn't cover it. Baked it at 350 for about 40-45 min. and it came out perfect. There is a slight hint of smoke to it. There was a couple of chunks of apple and hickory that didn't burn up from the previous days ribs cook.
