I am also in agreement with Toast and Jed, these TD's make you want to step up your game and try something new. I mean if there's no challenge why try? Matbe that's just me though. And I challenge myself everyday too, to become better in some way.
Some days I succeed, some days I just suck :laugh: but that's life
I aim for the top of the fence, many times I hit the dirt......oh well!
 
I haven't tried a throwdown yet, so what the heck! Here is my official entry for the Big Pig Throwdown.

I didn't take cook photos, so no cook thread - hope that's ok.

I made St. Louis ribs on my Smokin It Model 1. Rubbed with olive oil and a homemade rub, sat overnight, then smoked with hickory for 4 hours at 225. No foil.
