Those ribs are 90% smoke ring! Holy smokers, I don't remember seeing anything like that before. Well done, Dads, they look delicious, I would love to have shared in that plate. :hungry:

How was the apple pie spice on them?
We like it. I usually use pumpkin pie spice made from scratch. Here is that recipe.
Pumpkin pie spice rub
For one rack of spares-
2 tsp pumpkin pie spice
OR
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves
AND
1/2 tsp onion powder
1/2 tsp garlic powder
2 tbs brown sugar
1/4 tbs kosher salt
As for the smoke ring, I think that is one of the advantages of cooking untrimmed spares. You don't have to worry about them drying out, so they can soak up more smoke.
