Please accept my entry in the "Beef: It's whats for Dinner TD

I started with a 7lb Brisket flat, my Java rub and Texas sauce.

Trimmed a little fat...

This cook was done @225F for about 9 hrs.

The last hour I put on our homemade Texas sauce and wrapped.

80/20 ground beef seasoned with Dizzy Pig Cowlick Steak Rub and grilled to perfection and served on a lightly grilled onion roll and accompanied with melted colby-jack cheese, crisp, thick cut bacon, a grilled Vidalia onion slice (brushed with olive oil and dusted with salt and pepper before grilling), Beefsteak tomato, Boston lettuce, mashed avocado and a runny fried egg.

Fire pit Skewered Beef Round steak

I wasn't aware of the TD so not so many picture but enought to see it was a very good meal

Can't beat a good night around a camp fire, even if it is in your back yard!

Hey Mr. Poll Erector... hope you're up for another erection.

Please consider this as an entry in this throwdown. For this entry, I found a beef bottom round roast on sale and smoked it to make roast beef sandwiches.

Started the kettle with the snake with cherry wood.

I had marinated the roast over night and rubbed it down with Weber's steak and chop rub.

Cooked it to an IT of 140 for medium doneness and let it rest. Some would say that I overcooked it (sorry). Around here, it is considered done.

Sliced it as thin as I could since I do not have a slicer.

I grilled up some onions and mushrooms Put everything on a kaiser roll along with some provolone cheese. Wife said no more Arby's. I guess that was a compliment considering I didn't smoke this anywhere near 13 hours.

Beef Brisket!

Official entry..

Well, I got to talking to Toast today and he was telling me about the BEEF throwdown. Now, I was not planning on entering anything today but after a long day of cooking brisket I thought, what the heck. Why not!

I cooked this for my wife, AKA MaBBQ. Ya see, she has been on this diet and she has been pre making all her meals. One of her favorites is brisket. So about every two weeks she starts telling me to smoke her a brisket. So today was brisket day. By the way, she has lost over 40 lbs in the last 3 months so this seems to be working real well for her.

I started by trimming the fat and rubbing down the brisket with equal parts of kosher salt corse black pepper and granulated garlic. Let it sit over night then popped it in the old kamado.

Hear it is after 10 hrs in the smoker and 2 hrs rest in the cooler all wrapped up in blankets.
