Of those of you that own a kamado style how often do you do a self clean (i.e get it up to 700-800+ ) where you burn off all the build up? i have been doing allot of pork and did one this am and it looks soo nice all white. is a "clean" one good or is it better to have some residue

i've had my big green eggs for a few years now and i did a burn out on my large one once. i haven't decided if i'll do it again.
