Well all week I had in mind a 7lb brisket as an appetizer.

Went to pick one up and all they had were 11lb as the smallest, but it was very good price so I didnt complain.

I had everything planned out and timed out for the 7lb'er and my brain never made the adjustment.

Well appetizers start serving around noonish - damn brisket is at 172 yet. It may need to be put in the oven, and not rest for a full 2 hours.

Im going to see what I can get the smoker temp up to, as its 25 degrees outside. Got a new chimney lit now and just waiting to pour it on.

Damn Im a maroon sometimes :)
